Since cherries are in season, I thought I’d feature a healthy recipe which was cherry themed. I came across this recipe from Feed Feed and it’s phenomenal! This Cherry Salsa & Grilled Salmon recipe is so easy and delicious, it’ll satisfy both your savory and sweet side.

Ingredients

4 Wild caught salmon fillet
1 cup of cherry
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 tablespoon mirin
some fresh basil, olive oil, salt & pepper

Instructions:
1. Remove seed from the cherries and dice cherry meat, then mix well with the syrup, vinegar, lemon juice and some fresh basil (can make ahead and be stored up to 3 days in the fridge)
2. Grill salmon fillet with olive oil, salt and pepper on high heat in 2 mins, then add mirin on top of the salmon and turn to medium-low heat, another 3-5 mins.
3. Pour some cherry salsa on the grilled salmon, sprinkle some more fresh basil.
